Fix API title and redirect to external docs (#372)

## Summary
- Changes the API title from "MCP Registry API" to "Official MCP
Registry"
- Redirects root path to GitHub docs instead of /docs endpoint
- Adds GitHub repo and docs links to API description

Fixes #370
